We always stock up on boneless, skinless chicken thighs, so we had some on hand in the fridge. Since it was chilly and rainy, I decided to braise them with some wine and balsamic vinegar. The recipe we loosely followed is here.
This dinner called for something creamy and decadent- we both agreed that creamy mashed potatoes were in order.
A side of spicy, garlicky spinach balanced out this yummmmmmy and easy dinner. I just warm up some olive oil in a wok, grate in a few cloves of garlic, sprinkle in a few pinches of red pepper flakes and some salt and sauté the spinach until just wilted.
Et voila- a super simple, cheapy cheap but delicious meal for under $10. Happy anniversary, indeed!
Here is the approximate cost breakdown (based on our local grocery store prices)
- 1.99 lbs boneless/skinless chicken thighs: $3.00
- baby spinach: $2.50/12 oz. bag
- potatoes: $0.94 (about half of a bag that cost us $1.88 on sale)
- onion: $0.17 (from a bag of 6 onions that cost $1.00 on sale)
- sour cream (for the potatoes): $0.18 (about 1/8 of a container that cost $1.50)
- balsamic vinegar, oil and spices: had in cupboard
- chicken stock: $0.62 (about 1/4 of a container that cost $2.50)
Grand Total: $7.41!!!
Oh, and for dessert? Deeply chocolatey, faint-because-its-so-good Gâteau au chocolat fondant de Nathalie from Chocolate and Zucchini. We topped it with a few sliced strawberries that we macerated in a little balsamic and some sugar. Along with some $5 Prosecco from Trader Joe's, I'd say it was just about as perfect an anniversary meal as one could get.
Add in the $3.50 for the Ghirardelli 60% cacao pieces and $2.50 for the strawberries and you come out just over $10 at $13.41. Not too shabby!
