Quickie Dinner- Easy Bolognese

There is nothing like a dinner that you can literally throw together in less than 10 minutes and eat in less than 20. A quick (not so authentic) spaghetti bolognese is one of our go-to's for a simple yet satisfying weeknight meal.

The best part about this recipe? You can't really screw it up. Don't have red wine? Not a problem. Have ground turkey and not ground beef? It's a great substitute! (We actually used ground turkey when we made this last night, but we usually use 97% lean ground beef).



Easy Spaghetti Bolognese

1 lb ground beef (or turkey, chicken etc)

1 onion, chopped

2 cloves garlic, chopped

1 carrot, peeled and grated

28 oz. canned tomatoes (or 1 jar spaghetti sauce)

salt and pepper to taste

1/2 to 1 tsp red pepper flakes

1/2 c. dry red wine

1 bag of baby spinach (or regular spinach de-stemmed and washed)

How to:

In a large dutch oven (or heavy saucepan), heat 2 tbsp extra virgin olive oil. Add onions, garlic, red pepper flakes and carrot and sautè 5-7 minutes over medium heat until they soften. Add in the ground meat, season with salt and pepper and brown. Throw in your tomatoes or sauce, red wine and chicken stock and bring to a boil. Reduce heat to low and simmer for 15 minutes or so, until slightly thickened. Add in spinach right before you want to eat- it will wilt really quickly.



We serve this either with some whole wheat spaghetti or with polenta. Either way, it's super yum and really quick. We also had a little arugula salad with some sliced apples, feta and balsamic viniagrette. Nom.
