Menu Plan Monday!

Monday- Enchiladas (already made and frozen), cucumber/tomato/feta/cilantro salad






Tuesday- Lemon/rosemary roasted chicken, mashed sweet potatoes, peas


Wednesday- Indian spiced lentil stew, chana masala and naan bread


Thursday- Baked pasta with spicy sausage (already made and frozen!), green salad


Friday- Buffalo chicken pizza, green salad


Saturday- Soy-ginger chicken, brown rice, ginger carrots

    Monday: Cuban Sandwiches with Chipotle Honey Planains
    Tuesday: Moe's (I'm going out for girls night)
    Wednesday: Pork "Fried Rice" (with brown rice)
    Thursday: Jambalya with Turkey Kilbasa and salad
    Friday: Cajun Shrimp & Pepperjack Grits and salad

  2. Monday: Pulled pork and rice with sauteed kale
    Tuesday: Sweet potato and chorizo enchiladas
    Wednesday: BBQ Pulled pork (from monday) pizza for Kyle and pesto veggie pizza for me.
    Thursday: Spaghetti with hot italian turkey sausage and a tomato salad
    Friday: Chipotle-Apricot glazed chicken thighs with green beans and brown rice.

  5. So the chicken thighs...I just have an idea and it is: Remove the skin, make a glaze of apricot jam and a pureed chipotle. Brush it on and bake. Noms will happen. Promise!

    Make sure you line your sheet pan it WILL burn onto the bottom, but the thighs will be fine!

    ps--I can't wait to get home today. I have tomato sauce in the slow cooker. It's going to smell SO good.

  7. Ally isn't not my recipe it's Matt's! lol He usually uses a box BUT he does make it from scratch sometimes. It's pretty basic, somewhere along the lines of sauteeing the kilbasa (we can get some AWESOME stuff from a smokehouse way out near Amherst), add diced green & red bell peppers and onions and sautee, then add chicken stock, rice and some tomato puree. I'm not sure about the spices but I'll ask! Then you just cook it down until the rice is ready. YUMMY!
