Simple Suppers: Pork Tenderloin Tacos



After a super blustery winter day here in New England, we were craving something spicy to warm us up. Enter: pork tenderloin tacos. Oh my goodness this is so easy, so delicious and (most importantly!) so cheap. The pork tenderloin cost us a mere $3 on sale and the rest of the stuff we had on hand. Check out how we did it, so you can have your very own delicious tacos for dinner tomorrow night!

Pork Tenderloin Tacos

1/2 lb pork tenderloin (or more depending on how many people are eating)

1/2 tsp. salt

1/4 tsp. cumin

1/4 tsp. garlic powder

1/4 tsp. chili powder

1/8 tsp. cayenne pepper (or more if you like spice!)

Wash and dry tenderloin well. Rub with spice mixture until coated.



 

In a very hot oven-proof pan melt 1 tbsp. butter and 1 tbsp. safflower oil and sear tenderloin for approximately 2 minutes per "side" until thoroughly seared. Throw in a 400°f oven for 10-15 minutes or until cooked through (use a meat thermometer to ensure that it's up to temperature, but don't overcook!!).



 

Let the meat rest on a cutting board for a few minutes. Slice on a diagonal into thin slices.



We served our tacos on corn tortillas with sour cream, a simple salsa of chopped tomatoes, onion, garlic, hot sauce, red wine vinegar, salt and pepper as well as some pan-grilled sweet corn (and a little bacon for good measure). Chopped and roasted sweet potato and onion were an amazingly simple but delicious side dish, but let's not kid ourselves. The taco was the star of this show.
