Menu Plan Monday!

Good morning friends! Can you even believe that August is nearly over?! I most definitely cant- although waking up to low 60's this morning certainly helped me to be happy about the fall weather that's just around the corner! I am thankful for the gorgeous and warm weekend- we headed up to York, Maine to celebrate my "little" brother's 19th birthday! 
Here is what we have on the menu this week:


Breakfasts
  • Steel cut oats (I started using the McCann's oats in a box- 3 minutes to cook!), with fruit and peanut butter
  • Smoothies (although only at work- our blender broke!)
  • Cereal/yogurt

Lunches:
Dinners:

Menu Plan Monday!

Happy Monday, all! I can't even believe it's the end of June already. Where did the first half of this year disappear to?? How was your weekend? Did you do/cook anything fun????


Here's what we've got on the schedule this week:


Monday: Baked sweet potatoes with spinach and black beans, salad
Tuesday: Slow cooker carnitas, corn tortillas, homemade guacamole and pico de gallo
Wednesday: Carrot curry soup, grilled cheese
Thursday: Grilled veggies, turkey burgers and sweet potato fries
Friday: Veggie chili and cornbread
Saturday/Sunday: Happy 4th of July Weekend! We'll be grilling, I'm sure.


For breakfasts:
-Steel cut oats with baked apples. Mmmm
-Fruit salad and Greek yogurt
-Whole wheat English muffins and an egg


For lunches:
-Grilled chicken salad wraps
-Veggie wraps
-Greek yogurt and granola (we're going to try and make our own- have a good recipe???)
-Tuna salad wraps

Menu Plan Monday!

Happy Monday!!! I'm secretly kind of excited that it's going to be a bit chilly this week, since that means one more week of heartier dinners. Once it gets super hot, not only do I not want to cook but I rarely have a appetite (all I want to eat are cold berries!). Here's what we've got cooking this week: 


Monday: Lemon-thyme pork cutlets with baked sweet potatoes, sauteed zucchini

Tuesday: Grilled chicken rubbed with chili and cumin, black bean salad
Wednesday: Slow cooker chicken tacos, pico de gallo and avocado
Thursday: Spinach and feta stuffed chicken, roasted broccoli
Friday: Grilled pizza with chicken, tomatoes and spinach
Saturday: Chicken and mushroom quesadillas, veggie chili
Sunday: Happy Father’s Day! We'll probably go out to eat today- to celebrate Mike's being such a great cat-dad ;)

Menu Plan Monday! (On Tuesday!)

Hi again! We ended up with a terrifically busy Monday and I completely forgot to share with you our weekly menu! Luckily for you, Orgjunkie has tons of menus ready to go for your browsing pleasure. Hop on over there to see what goodies are waiting to inspire you! 

Monday: Dinner out- whoops!


Tuesday: Grilled chicken breast, sauteed zucchini and quinoa


Wednesday: Whole wheat spaghetti, marinara, spinach and mushrooms 


Thursday: Turkey burgers with no bun, salad 


Friday: Baked cod with lemon, carrot-brown rice risotto, spinach

Menu Plan Monday!

Menu Plan Monday!

Happy Monday, everyone! We're back atcha with another Menu Plan Monday- this time, a little different. We're going to skip the grocery shopping this week and focus on a major pantry cleanout in preparation for the spring! And, as always, we're linking up with the fabulous Orgjunkie's MPM! Monday: Cumin spiced chickpea salad with quinoa

Tuesday: Vegetable lasagna from February's dinner co-op and a salad

Wednesday: Chana masala, basmati rice and slow cooker lentils

Thursday: Slow cooker minestrone soup (half for the freezer)

Friday: Black bean tacos with feta and slaw

Menu Plan Monday!

Hi All- We're back with another edition of Menu Plan Monday. As always, we're linking up with our friends at Orgjunkie.com! Go check them out to find all sorts of menu planning awesomeness. 




Monday: Pork tenderloin with mushroom gravy (we're not going to stuff it), whole wheat couscous, roasted broccoli


Tuesday: Feta-spinach stuffed chicken breast, brown rice and green peas (frozen from Trader Joe's)


Wednesday: St. Patrick's Eve dinner party! Corned beef (in the slow cooker!), and cabbage, shepherd's pie and Guinness chocolate cupcakes with Bailey's frosting.  


Thursday: Slow cooker BBQ chicken (we have drumsticks and thighs in the freezer), sweet potato fries


Friday: Leftovers 


Saturday: Slow cooker Minestrone soup, homemade whole wheat bread (try this- it's amazing!)
                    This is a stack of recipes I've cut out of magazines and need to file!

Monday- Enchiladas (already made and frozen), cucumber/tomato/feta/cilantro salad






Tuesday- Lemon/rosemary roasted chicken, mashed sweet potatoes, peas


Wednesday- Indian spiced lentil stew, chana masala and naan bread


Thursday- Baked pasta with spicy sausage (already made and frozen!), green salad


Friday- Buffalo chicken pizza, green salad


Saturday- Soy-ginger chicken, brown rice, ginger carrots

Menu Plan Monday!

Hey all! Sorry for the radio silence in the last few days. We've had a friend in from out of town, coupled with a super busy weekend so we've let the blogging lapse. 






Fear not, loyal Tiny Wallet Stylers- for we're back in action with a brand spanking new Menu Plan Monday!!! As usual, we've linked up with Orgjunkie.com, so go check out their hundreds of amazing menu plans to get some inspiration!




Last night, we made an amazing sausage, lentil and brown rice soup that we'll blog about later! It was soooo yummy and really satisfying.


Our special Valentine's dinner will be:


Marinated steaks with caramelized onions and mushrooms, goat cheese polenta, roasted asparagus and some homemade chocolate-heath bar ice cream (recipe to follow). Mmmm.

How We Meal Plan on a Budget

During the holidays, things get very hectic around Tiny Wallet HQ so naturally we slide on some normal household duties. The first thing, in past years, was cooking dinner. Instead, we'd opt for take out and going out to restaurants. Well, since the budget has gone into place, we realize that takeout and going out for dinner is a thing of the past. We had to change. Enter...the internet!
